Choose the right ground turkey.

When making turkey meatballs, it’s important to choose the right ground turkey. Look for ground turkey that is labeled as lean or extra lean, as this will have less fat and more protein. You can also opt for ground turkey breast, which is the leanest option. Avoid ground turkey that is labeled as “ground turkey with skin” or “ground turkey with added fat,” as these will have a higher fat content. Choosing the right ground turkey will ensure that your meatballs are both healthy and delicious.

Add moisture with fresh veggies, breadcrumbs or milk.

To ensure that your turkey meatballs are perfectly juicy, it’s important to add moisture to the mixture. One way to do this is by adding breadcrumbs and milk. Start by soaking the breadcrumbs in milk for a few minutes until they are fully saturated. Then, add the breadcrumb mixture to your ground turkey along with any other seasonings or ingredients.

The breadcrumbs and milk will help to keep the meatballs moist and tender, even after cooking.

For my Turkey Meatballs, I relied on my food processor to obtain the moisture needed from chopping up the fresh veggies I added. Then I used the gluten-free breadcrumbs to get the right consistancy to forming the meatballs.

Use flavorful seasonings, herbs and fresh veggies.

Adding flavorful seasonings,herbs, and veggies is key to making delicious turkey meatballs. Some great options include fresh spinach, shallots, peppers, onions, garlic, onion powder, oregano, basil, and parsley. You can also experiment with different spice blends to find the perfect combination for your taste buds. Just be sure to add the seasonings and herbs to the meat mixture before forming the meatballs to ensure that the flavors are evenly distributed. With the right seasoning, herbs, and veggies your turkey meatballs will be bursting with flavor and protein.

Don’t overwork the meat. Super Important!

When making turkey meatballs, (or any meatballs for that matter) it’s super important not to overwork the meat. Overworking the meat can result in tough, dense and dry meatballs. To avoid this, mix the ingredients together gently and only until they are just combined. Use a light touch when forming the meatballs, and don’t pack them too tightly. This will help to ensure that your meatballs are juicy and tender.

Cook the meatballs to the right temperature.

To ensure that your turkey meatballs are safe to eat, it’s important to cook them to the right temperature. The internal temperature of the meatballs should reach 165°F (74°C) to kill any harmful bacteria. Use a meat thermometer to check the temperature of the meatballs, and make sure to insert it into the thickest part of the meatball.

Rest Is Good For Everyone – Including Meatballs!

Once the meatballs have reached the correct temperature, let them rest for a few minutes before serving to allow the juices to redistribute.

Ingredients

  • 2lbs ground lean turkey
  • 1/2 green pepper diced
  • 2 green onions chopped
  • 1/2 jalapeño chopped
  • 1/4 red bell pepper chopped
  • 1 cup of fresh spinach
  • 1/2 cup cooked white rice (leftover)
  • 1 Tsp Garlic Powder
  • 1 Tsp Onion Powder
  • Hand full of chopped fresh parsley
  • 1 Tbsp Chives
  • 1 Tbsp Worcestershire sauce
  • Salt and pepper (to taste) a pinch and a grind
  • 1/2 cup Gluten Free Panko breadcrumbs (moisture fix to form balls)

Instructions

  1. Preheat your oven to 400F
  2. Pulse veggies in a food processor (or just finely chop the veggies for a more rustic meatball)*
  3. Mix with turkey and Worcestershire
  4. Add in the cooked rice (optional)
  5. Work the turkey mixture gently, otherwise they become super dense.
  6. Add gluten-free breadcrumbs slowly until the mixture is not too tacky when forming the meatballs
  7. Form about 30 meatballs on a lined sheet pan
  8. Bake at 400F for about 15-25 minutes depending on your oven.

Notes

Using a food processor makes this super quick and easy to add the veggies to the turkey meat - super healthy and delicious. Add any leftover veggies you may have in your fridge or fresh herbs from your garden. If you prefer to play with your knife skills, by all means go for it, it's rather relaxing!
