Learn How Easy It Is To Make This Italian Bruschetta

Traditionally Italian Bruschetta is made using plum tomatoes which are vibrantly red when ripe and oh so good. Making Bruschetta from scratch for your next party or gathering and it is sure to please. It is rather inexpensive to make and packed full of flavor.  I like to use Wegman’s Basting Oil which adds another layer of flavor. If you never tasted Wegman’s oil, you definitely should pick some up and try it. It works with a lot of different foods where you would use Extra Virgin Olive Oil. 

When I was in high school I used to work at an Italian Restaurant / Pizza Shop and would prepare Bruschetta daily. Lots of chopping, dicing and cutting board work to serve these Bruschetta loaves for the lunch rush. We would easily sell through 2 dozen rolls quickly but not to worry, this can be made very quickly to order too.

Simple Ingredients Equals Flavorful Bruschetta

Italian cooking is all about simplicity. Using fresh simple ingredients handled with love is the hallmark of Italian food. Fresh tomatoes, red onions, basil and garlic are a perfect combination of flavor. Add Fresh Mozzarella and Balsamic Vinegar and it becomes Caprese style Bruschetta.

When I am making this for my family, I also keep a small plate next to my work space for a few chef treats along the way. Serve bruschetta at a party or gathering and its sure to disappear quickly. You can even use this recipe as a topping to chicken, pork chops, fish, shrimp or pasta!

How to Make Authentic Bruschetta

How To Make Authentic Italian Bruschetta

Fresh Tomatoes from the garden is the star of this recipe. Traditionally bruschetta is made using plum tomatoes which are vibrantly red when ripe and oh so good.

You can use cherry tomatoes, San Marzano tomatoes or any ripe red tomato you have on hand. Garden to table is rewarding so we are not picky which tomatoes we choose to make this yummy dish. We strive to use anything that comes out of the garden so nothing goes to waste. Fresh tomatoes, onions, basil and garlic are a perfect combination of flavor.

Serve bruschetta at a party or gathering and its sure to disappear quickly. You can even use this recipe as a topping to chicken, pork chops, fish, shrimp or pasta!

Ingredients

  • 10 red ripe plum tomatoes
  • 1 medium red onion
  • 2 cloves of fresh garlic
  • 1 bunch of fresh basil 
  • 4 TSP olive oil or Wegman's Basting Oil
  • 2-3 Italian rolls (if making as appetizer) 
  • Parmesan cheese for sprinkling (optional)
  • Salt & Pepper to taste

Instructions

  1. Rinse tomatoes in cold water to remove any dirt or debris
  2. Cut tomatoes in half and scoop out seeds. We do not want the seeds as it adds too much water content to the mixture.
  3. Dice tomatoes into 1/2 inch pieces and place in bowl for mixing
  4. Chop garlic cloves up good into small pieces and toss into tomato bowl
  5. Wash red onion and remove the out skin, then dice onion into 1/4 pieces and toss into tomato mixture.
  6. Take 6 large basil leaves, stack them on top of each other and roll them up together
  7. Rough chop the basil and toss that into the bowl
  8. Add 4 TBSP of extra virgin olive oil to the bowl and toss mixture around so it is evenly coated.
  9. Bruschetta toping is now complete and you can use this as a topping for chicken, pork, fish, shrimp, or pasta
  10. If making appetizer, take your Italian rolls and cut them lengthwise in half
  11. Preheat your oven or toaster to 375f
  12. Drizzle Extra Virgin Olive oil on each half of the roll
  13. Sprinkle Parmesan cheese on each half
  14. Place rolls on a sheet pan and pop into the oven or toaster for 10 minutes or until the rolls start to crisp up but not burn
  15. Remove rolls from the oven/toaster and allow to cool
  16. Cut each half roll in half and spoon bruschetta mixture on each piece
  17. Complete the dish by sprinkling parmesan cheese on top and garnish with a sprig of basil

Notes

Feel free to experiment with different types of tomatoes, or add some balsamic vinegar drizzle on top, or fresh mozzarella. Enjoy!
